Top 5 Favorite Fall Recipes

Fall is here and the holidays are around the corner!

57 days till Christmas! But, who's counting? Not me ;)


Check out this list of my favorite Fall recipes.

1. Saucy Baked Pumpkin Pasta — Ambitious Kitchen

Fall twist on a classic baked ziti with pumpkin puree,

ground turkey and LOTS of cheesey goodness.

Recommendation: Use entire 8oz can of pumpkin for more flavor.



2. White Chicken Chili — The Neelys

A lighter (but better) option to traditional chili. The poblano

and jalapeño peppers give this dish the perfect amount of heat!

Recommendation: Reserve 1 cup of chicken broth for leftovers (the chicken

soaks up all the juice).



3. Pumpkin Pancakes — Savory Nothings

All the pumpkin flavor you could ever wish for in a fluffy pancake.

Recommendation: don't over mix batter. Top with your favorite nut or

chocolate chips!


4. Healthy Turkey Chili — Ambitious Kitchen

This turkey chili is hearty and filling and perfect for Football

Sunday!

Recommendation: Make this in the crock pot! (Not required)


5. Pumpkin Ravioli — Janelle Sanz

The pumpkin ravioli is a sweet pair with the pumpkin and squash flavors

from the sauce.

Recommendation: Buy more than 2 packages! You're going to be addicted!


Ingredients:

1 package Pumpkin Raviolis (Trader Joes)

1 cup (approx) Autumnal Harvest Creamy Pasta Sauce (Trader Joes)

2 handfuls spinach

Garlic (to taste)


Steps:

1. Boil pasta.

2. In a separate pan, sauté spinach with olive oil, garlic, salt & pepper.

3. Once spinach is wilted, turn off heat.

4. When water boils, add raviolis. Cook for approx 4 minutes.

5. Strain pasta (reserve a few tablespoons of pasta water).

6. Add raviolis to pan with spinach.

7. Add 1 cup (approx) of pasta sauce

8. Once heated, turn off and serve.

9. Top with ricotta, parmesan or your favorite cheese (optional)
